Grease build up in the sewer system can block sewer pipes, interfere with the normal operation of the city’s wastewater treatment system and cause sewer spills.
Fats, oils and grease (FOGs) come from cooking. It can be found in:
- Meat Fats
- Lard
- Cooking Oil
- Butter
- Food Scraps
When fats, oils and grease (FOGs) are put into the city sewer lines in any amount, they can seriously affect the sewer system’s ability to remove waste from our community. FOGs can be deposited directly on pipe walls, thus decreasing pipe capacity and, therefore, requiring an increased frequency of cleaning, maintenance, and replacement.
FOGs, especially grease (fats that are solid and stable at room temperature) dissolved in a warm and/or soapy liquid may not appear harmful. But when released into the sewer system that liquid cools down significantly. The grease/fats can harden and adhere on the pipe surface. Over time, FOG can cause big problems.
- Property Damage: Flooding created by blockages results in severe damage to floors,walls,ceilings and property
- Foul odours: Waste accumulation in drain lines emit odours
- Unhappy customers: Inconvenience customers and can shut down operations
Only way to remove grease from the drain lines is by jetting the lines with high pressure water
Prevention: Educate employees in the food service industry to scrape off the dishes before throwing everything into the dishwasher…
3 steps:
- Scrape the dishes in garbage can (catch as much as you can at source)
- Pre rinse every thing before putting them in the dishwasher
- Maintaining a clean and properly sized grease interceptor
